As we work to get our doors open we have had the opportunity to test brew and dial in our recipes. We will open with a limited number of beers as we believe quality is of utmost importance. The focus of our brewery is to create exciting beers highlighting locally grown ingredients. As a farm brewery, we are required to use the minimum percentage of NYS ingredients to qualify for this designation. However we strive to exceed the minimum requirements and make these local ingredients the focus of each recipe. Producing our own malt will provide us the ability to include non-traditional grains in our beer and provide these ingredients to other brewers as well.
